This savory chicken dish is a family favorite that we have on rare occasions, due to the length of time it takes to prepare. It’s perfect for a Sunday supper. Serve with a green salad and garlic bread for a satisfying meal.
Ingredients
1 pkg. boneless, skinless chicken breasts
3 eggs
1 8 oz. can Contadina Italian Herb bread crumbs
1/4 cup grated Parmesan cheese
1 pkg. pepperoni
1 pkg. thin, deli-sliced ham
yellow mustard
1 pkg. sliced mozzarella cheese
1 jar Marinara sauce
Directions
1. Pound chicken with a mallet until 1/4″ thick.
2. Spread mustard onto the chicken.
3. Layer with ham, slice of mozzarella and pepperoni.
4. Roll the chicken up like a jelly roll and secure with a toothpick.
5. In a medium bowl, mix dried breadcrumbs and parmesan.
6. Beat eggs in a separate bowl.
7. Pour enough olive oil into a large frying pan until 1/4″ deep. Add a half stick of butter. Heat until butter is melted.
8. Coat the chicken with the egg mixture, followed by the breadcrumb mixture.
9. Place chicken into the pan and cook over medium heat until golden brown.
10. Transfer the chicken to a 9×13″ baking dish. Then top with marinara sauce and remaining mozzarella cheese.
11. Bake at 400º for 25 minutes.

AeroGrow International, Inc. has announced the imminent launch of their latest and highly anticipated indoor garden kit, The Strawberry Patch, due in February. This kit will allow consumers to grow fresh strawberries year-round, using AeroGarden’s Plug and Grow countertop system. The kits will ship as live plants and be ready to eat six weeks.
Intrigued, I went to their website and watched their mini-infomercial and came away impressed by the healthy quality of their herb gardens. The AeroGrow system does not use dirt, but relies on a 100% humid, highly-oxygenated growing chamber. Plants grow significantly faster and have a higher nutrient content than dirt-grown plants. Most of the seed kits listed on the site have a harvest life of between 4 to 6 months.

The $150 pricetag deterred me until I read the reviews on Amazon. While there were a few complaints about the pumps malfunctioning, the majority of the customers were ecstatic about these gardens. One reviewer hit home when she talked about how much money she wasted buying the pre-shredded salad bags because of the high rate of spoilage. I usually buy two small bags of lettuce and consider myself lucky if they last more than two days inside my refrigerator. On average, I spend $300 per year on bagged lettuce. That’s a lot of money!
Another issue that hit home with me was the recent eColi scares we had late last year. With the aeroponic system, you don’t need dirt. Therefore, there is no risk of getting sick. Simply pluck off what you need and enjoy.
