Whenever I see a cookbook for kids, I always picture sickening sweet treats or grilled cheese sandwiches cut up to look like Kermit the Frog or the latest superhero. The recipes in Kitchen for Kids are for healthy foods and snacks that your children can prepare without the aid of knives or appliances. Some of the recipes include Dumpling Raviolis, Paddy Thai Noodles, One-Potato-Two Bread, Baby Lemon Meringue Pies and Strawberry-Fudge Striped Cake. Although ideal for teaching young children (four to eight) how to cook, adults who have no culinary skills may benefit from this book because it is very well written and illustrated.

Ingredients
2 cups tortilla chips, crushed
1/4 tsp. garlic salt
1/8 tsp. pepper, freshly ground
1/4 tsp. oregano
1/8 tsp. paprika
2.5 - 3 lbs. chicken pieces for frying
Directions
1. Place crushed tortilla chips, garlic salt, pepper, oregano and paprika in a large plastic bag. Shake well and set aside.
2. Rinse chicken pieces thoroughly in warm water. Coat each piece, one at a time, by placing it in the tortilla bag and shaking well until covered.
3. Place chicken, skin side up, in a lightly greased 9×13 inch baking dish.
4. Bake at 375º for 1 hour or until tender.

This chili has a sweet and smoky flavor with a spicy kick. I added meat to give this dish some substance and to make it last for more than one meal. You can make it either with or without the meat. To compliment this chili, I’m serving it with Krusteaz’s Honey Cornbread.
Ingredients
1 lb. ground beef, cooked and drained
2 15oz. cans black beans, drained
1 15oz. can corn, drained
1 15oz. can tomato sauce
1 14.5oz. can S&W Petite Cut Tomatoes with Sweet Onions and Roasted Garlic
1 7oz. can LaVictoria diced green chiles
1 pkg. The Spice Hunter Chili Mix
1 clove garlic
Directions
1. Dump all of the ingredients into a dutch oven, except meat, and bring to a boil. Reduce heat to low and simmer.
2. Brown meat until it’s fully cooked. You can spice it up a bit with minced onion and southwestern seasoning or cook it plain. Drain the fat. Add to the soup.
3. Simmer chili for at least thirty minutes before serving.
4. Garnish with cheese and sour cream.
