Homemade Pizza for Lunch

I used to love making homemade mini-pizzas when I was growing up. I’d take English muffins and use them to make pizzas for my sister and brothers for lunch or dinner. Today, Matthew and I used two 8″ Boboli pizza crusts to make pizzas.

He had his heart set on a Mexican version after seeing a picture in a recipe magazine. So, we went with that. Next time, I’ll have my way. I’m thinking of chicken carbonara, or a variation of that.

Ingredients

1 small jar of Alfredo sauce
1-2 chicken breasts, cooked and cubed
5-6 slices of bacon, cooked and diced
Mozzarella cheese

Does that sound yummy? It does to me. There are so many different combinations you try.

Matthew had a great time building the pizzas today. He got more practice using a knife, and he learned how to add the cheese without spilling it all over the floor.
